Vegetables that really don't count as carbs
Portland fitness, fat-loss and training enthusiasts who want to get in great shape on the Intermittent Fasting protocol: fear not. You need not subsist on a diet of only beef ribs, olive oil and kale. Eat these veggies for vitamins, fiber, satiety and because that's what Portlanders do. Eat Veggies.
Arugula, Asparagus, Broccoli, Brussels Sprouts, Cabbage, Cauliflower, Cucumber, Eggplant, Lettuce, Mushrooms, Okra, Onion, Peppers, Radish, Snow Peas, Spinach, Tomato, Watercress, Zucchini- all of these vegetables are good to go.
You can eat them and not really count them for your first few weeks of IFing your way to vitality. We get away with these veggies because they are either high enough in fiber or low enough in simple carbs to have little effect on your insulin, which is why we are eating this way in the first place.
So add any of these to all meals of the day and you'll be better off. Truly, this diet is not very restrictive. It's very simple and very awesome. Apply with discipline and it gets easier every day!
